English Muffin Bread

This recipe makes 2 loaves of chewy English Muffin Bread. It's leavened with yeast and baking soda. Quick and Easy to make.



INGREDIENTS:

2 cups milk

1/2 cup water

2 Tbls cornmeal

6 cups bread flour (or about 5 cups All Purpose flour)

2 pkgs active dry yeast

1 Tbls white sugar

2 tsp salt

1/4 tsp baking soda (1/2 tsp if using all purpose flour)



DIRECTIONS:

1. Warm the milk and water in small saucepan or in microwave until very warm (125 degrees). Lightly grease two 8 x 4 inch loaf pans; sprinkle cornmeal inside pans.

2. In large bowl, mix together 3 cups flour, yeast, sugar, salt and soda. Stir milk into the flour mixture; beat well. Stir in remaining flour, 1 cup at a time, until a stiff batter is formed. (I use my Kitchenaid mixer with the dough hook). Spoon or place batter into prepared pans. Cover and let rise in a warm place until nearly doubled in size, about 45 mins. Pre-heat oven to 400 degrees F.

3. Bake in preheated oven until golden brown, about 25 minutes. Remove from pans immediately and cool.
